Description

This is how I make “Fried Green Tomatoes.”

Ingredients

  • 4 whole Dark Green Tomatoes
  • 1 whole Egg
  • 1 Tablespoon Water
  • ¼ cups 50/50 Whole Wheat/White Flour
  • ¼ cups Corn Flour (Finely Ground Corn Meal)
  • ½ cups Flavored Bread Crumbs, Preferably Garlic And Onion Flavor.
  • ½ teaspoons Paprika
  • ½ cups Panko, This Is A Japenese Bread Crumb And Is Very Crunchy
  • ¼ teaspoons Freshly Ground Black Pepper
  • ¼ cups Fat For Frying, I Like To Save Bacon Fat From Bacon, Lettuce, Tomato Sandwiches.

Preparation

Pre-heat a large fry pan on medium high heat, I feel that Cast Iron Pans work best for this but Teflon will do fine.

Cut the Tomatoes in 1/2″ slices, place in single layer on towel.

Whip the egg and water.

Mix the flours, Bread Crumbs, Paprika, Panko and Black Pepper then put in an 8″ cake pan or a pie plate.

Lay the Tomato slices on a clean kitchen towel and turn after about a minute to dry the surface of the Tomato.

Dip the Tomato slices in the egg/water mix and turn to coat both sides. Then dip into the bread crumb mixture and coat both sides well.

Add some Fat to the hot pan and then lay the Breaded Tomato Slices into the pan.

Fry for about two minutes until Browned on bottom, turn and brown the other side. Do not over cook, they should be browned but not soft in the middle.

Serve at once. These “hold” their heat well but do not keep in a warming oven. Eat at once for best flavor.
