Hot Chorizo Dip

Description

A game day dip full of all kinds of goodies like chorizo, onions, jalapenos, refried beans and cheese. Then of course it’s topped with more cheese and broiled until hot and bubbly.

Ingredients

  • 12 ounces, weight Chorizo
  • ½ whole Medium Onion, Chopped
  • 1 whole Jalapeno, Stem Removed And Diced
  • 1 cup Refried Beans
  • ¼ teaspoons Ground Cumin
  • 1 cup Shredded Cheddar Cheese, Divided
  • 2 whole Green Onions, diced

Preparation

1. Turn on the oven broiler.
2. In a pan, cook chorizo until cooked through. Transfer to a plate. Reserve 1 tablespoon of pan drippings.
3. In the same pan that you cooked the chorizo in, cook the onion and jalapenos just until softened, 2 – 3 minutes. Return chorizo to the pan and stir in refried beans, ground cumin and half of the cheddar cheese. Cook until the beans are warmed through and the cheese has melted. Transfer dip to a oven safe small baking dish. Top with remaining cheese and place under the broiler for 3 minutes or until cheese is melted and bubbly.
4. Remove from oven sprinkle with green onions. Serve hot.

made it tonight, doubled the recipe because it served as a late night meal. It got a 5 star rating here! ( I do wish I could find a recipe for chorizo though…that was some mysterious meat) lol

This is in my frig right now, ready to be reheated for tomorrow. It almost didn’t make it, I came close to eating it right after I made it. It is delicious!! Thank you for posting a great recipe!

I just clicked on TK and the pic of this dip was the first thing I saw. Pretty sure my mouth started watering and I just had lunch!Looks DeLish!

Picture of the dip looked great, but tasted horrible. I don’t think my taste buds agreed with the chorizo.

Our family loves this dip! The first time I made it my hubby and son almost ate it all before I could get a taste! I will definitely double for taking to any party. We will probably add more jalapeno next time too. The fresh jalapenos just haven’t added enough heat (so those who are weary of heat – don’t be!) Try it!! :)

I doubled the recipe and put this in my big ole 2 qt casserole dish.

It was raved about at my Super Bowl party last night! I might put a bit more onion in it next time…
