Description

Nothing beats making homemade potato chips. No preservatives, just straight up delicious potatoes, seasoned any way you like.

Ingredients

  • 2 Tablespoons Olive Oil
  • 2 cloves Garlic, Smashed
  • 3 whole Russet Potatoes, Cleaned, Skin On, Cut Into 1/4 Inch Thick Slices
  • 8 cups Cold Water
  • 1 teaspoon Salt
  • 1-½ Tablespoon Herbes De Provence
  • 1 Tablespoon Cooking Spray

Preparation

Begin by heating your oven to 400 degrees F.

While the oven preheats, heat a small skillet and add the oil and garlic. Cook on medium to low heat for about 5 minutes, trying to get as much of the garlic infused into the oil. Remove the skillet from the heat. Remove the garlic, and throw it away. Reserve the oil.

Make sure you thinly slice your potatoes. This is great practice with your knife skills. Once all of your potatoes are sliced, add them to the cold water, making sure they are all submerged. Let them sit in the water for about 20 minutes. Drain, and place them on a large towel, making sure you pat them dry.

Add the potatoes to a large bowl, adding in the reserved oil, salt, and herbes de provence. Toss the potatoes, making sure you evenly coat them with the seasonings.

Spray a large sheet tray with cooking oil. Add the sliced potatoes to the sheet making sure not to overlap or crowd. Place in the preheated oven and cook until a nice golden brown, being careful not to overcook them as they will get bitter. These take about 20–26 minutes in the oven.

Quickly remove the potatoes from the pan, adding them to another bowl and toss with a pinch of salt. Serve warm or place them in a brown paper bag for later use.

When I placed these on the table, the kids took a glance at them, as did my wife. As soon as they ate one, it was as though we had the best bag of chips poured out onto a plate and we all just dove in. Simple things make people happy. Enjoy.

So I made them and I guess my oven isn’t that great. I needed to leave them in closer to 30 minutes, they were still a bit soggy when I went to eat them :(

Yum! So very good and rather easy too! Family “snarfeld” them up! I omitted the garlic (personal preference). They took a little longer than 30 minutes to be crispy and brown – but well worth it!

I’m actually mad that these tasted so freaking good because they took a little while to make and I was in a hurry!

These were very delicious, and definitely good practice with my knife skills. I need to work on slicing them more evenly. Wonderful recipe!

Really tasty-I was rushed when I made these and didn’t get them entirely even so some of ours were more chippy than others but they were all good! It got a thumbs up from all 3 members of our family which is really rare!

Sooo good! I had no idea making potato chips was so easy! I was a little afraid of the herbes de provence, thinking it might lend a perfumey flavor. Not at all. They are so savory and unique. They lasted about 10 minutes. Thanks for a great recipe!
