Description

These mini muffins are perfect for an appetizer, snack, or any occaision!

Ingredients

  • ¾ cups All-purpose Flour
  • ¾ teaspoons Baking Powder
  • ¾ cups Milk
  • 1 whole Egg, Beaten
  • 4 ounces, weight Ham, Chopped
  • 4 ounces, weight Cheddar Cheese, Shredded

Preparation

1. Preheat the oven to 375 degrees. Spray a 24-cup mini muffin tin with cooking nonstick spray.
2. In a medium- large sized mixing bowl, whisk the flour and baking powder together.
3. Whisk the milk and the beaten egg into the flour mixture.
4. Add in the chopped ham and shredded cheese. I used Black Forest ham from the deli, but you can use whatever kind you’d like.
5. Let the mixture sit for 10 minutes.
6. After resting for 10 minutes, stir the batter and spoon into the muffin cups.
7. Bake at 375 degress until puffed and golden, about 15 to 20 minutes.
8. Serve with dijon mustard for dipping (optional).

I just made these! I feel that they could use a little something, salt, maybe green onions, even a dash of curry powder! I bet my kids will love them as is though! Thanks for the new recipe!
