Description

Grilled Shrimp, Mango and Guacamole Bites – fresh homemade guacamole topped with a savory grilled shrimp and sweet grilled mango. It’s the perfect combination of flavors and textures.

Ingredients

  • FOR THE SHRIMP:
  • 3 cloves Garlic, Chopped
  • ½ cups Cilantro, Chopped
  • ¼ cups Olive Oil
  • 1 pinch Sea Salt And Fresh Cracked Pepper To Season
  • 24 whole Medium Shrimp, Peeled And Deveined
  • 6 pieces Wooden Shish-kebab Skewers

  • FOR THE GRILLED MANGO:
  • 1 whole Mango, Peeled
  • _____
  • FOR THE GUACAMOLE:
  • ¼ whole Red Onion, Finely Chopped
  • 1 whole Jalapeno, Deseeded And Finely Chopped
  • 2 whole Large Cherry Tomatoes Or 1 Roma Tomato, Chopped
  • ¼ cups Cilantro, Chopped, Plus Extra For Garnish
  • 3 whole Small Avocados
  • 1 whole Lime
  • 1 pinch Sea Salt And Onion Powder To Season To Taste
  • 24 whole Tortilla Chips

Preparation

Grilled Cilantro Garlic Shrimp:

1) Combine garlic, cilantro, olive oil. Season with salt and pepper. Add shrimp and marinate for at least 30 minutes.
2) While the shrimp is marinating, work on guacamole and soak wooden skewers.
3) Skewer the shrimp and place on grill (medium low heat). Grill for about 2 minutes on each side or until done. Pull the shrimp off of skewers, remove tails and squeeze a little lime juice over the shrimp and season with salt if needed.

Grilled Mango:

1) Use a vegetable peeler to peel mango. Slice the two wide sides off of the mango to grill (and then eat the rest of the flesh surrounding the seed).
2) Place the mango on grill on medium low heat. Grill for about 3-4 minutes on each side. Once mango is cool enough to handle, dice into small chunks. (The grilling process really brings out the sweetness of the mango).

Guacamole:

1) Combine onion, jalapeno, tomatoes and cilantro.
2) Peel and pit the avocados. Add avocados, juice of 1 lime, sea salt to season and a couple dashes of onion powder. Mash the avocados and combine the mixture.

Assemble:

1) Place a small spoonful of guacamole onto the tortilla chip (I like the chips with the hint of lime), topped with a grilled shrimp and a few bits of mango. Garnish with cilantro. Serve immediately.
