Summer Necessity!

Ingredients

  • 1 whole Pineapple
  • 1 cup Lime Juice
  • 1 cup Brown Sugar

Preparation

Slice pineapple into 1/2 inch pieces and place in a big bowl with a snap on lid.

Pour on the lime juice and brown sugar. Snap on the lid, and shake.

Allow this to marinate in the fridge, shaking it and turning it upside down every so often.

Toss marinated pineapple on the grill, turn once during the cooking process.

The brown sugar and lime, as well as the pineapple’s natural sugars get all caramel-y and the warm softened pineapple is super juicy! This can also be refrigerated, and eaten cold. It is delectable!

FURTHER INSTRUCTIONS

A whole pineapple can be an intimidating thing. I was intimidated anyway.

You’ll need to take a good sharp knife, like a chefs knife, and cut off the stem and the bottom of the pineapple. I try not to take of more than an inch.

Then you are going to want to slice it in half lengthwise. I stand the pineapple up on its (now flat) end and slice from top to bottom.

Then I lay it on its (now flat) side and slice it in half again, lengthwise.

The pineapple is now quartered. If you have something different, my descriptive skills are lacking!

Each pineapple comes with a very tough core which should be removed as it is no fun to bite into.

Keep each quarter laying on its side and just angle your knife to remove about 1/2 inch of what used to be the middle of the pineapple.

Now just slice it into 1/2 inch pieces and place it in a big bowl, this bowl should have some sort of a snap on lid.

Next you are going to pour on the lime juice and brown sugar. Snap on the lid, and shake.

Allowing this to marinate in the fridge is a good idea, and shaking it, turning it upside down, or whatever is a good idea as well.

Whenever you are ready, just toss it on the grill. I find that it works at whatever temperature I happen to be grilling at, just keep and eye on it and turn it over once during the cooking process.

Loved this! I used two pineapples (I did not double the marinade) sliced into about 1/2″ rings, and 8 of us ate every bite. It was a hit with everyone from the visiting 2 year old on up. I was worried that the pineapple would get too mushy from sitting in the marinade all day, but scheduling dictated that it had to go in first thing in the morning but not be grilled until about 6 pm, and it was just fine. I cut thick rings to help ensure stability after 10 hours in lime juice, but it might have been fine with thinner. Some cooking notes: I used bottled lime juice due to time constraints. Because I doubled the pineapple, easily half of it was not submerged in marinade. I just shook it several times throughout the day, and it took about 10 or 15 minutes to grill. Nice grill marks, too. I will definitely put this into the regular summer rotation.

I tried these for the first time while down at the lake and they were a hit. I didn’t use a whole pineapple, but used slices and chunks. When it come to grilling time nobody was quiet sure how to cook them on the grill so instead we laid them all out over a medium coals. The would randomly turn them over onto the other side. What we found worked best was so use spatula or tongs to flip. Each time the pineapple was flipped it took on a carmela color. Omne we had the desired carmeling on both sides then it was ready to turn them into a special treat for dessert. Not a single pineapple was left on the plate and then even the younger boys tried and said they were “okay”, but I went home with an empty plate. Will definitely makes again, but next time try the whole pineapple, either that or buy out the grocery store! It’s a keeper as we say in the family.
