Description

This is one of our favorite appetizers when we go to Chinese restaurants.

Ingredients

  • 2 cups Flour
  • ½ cups Cold Water
  • ½ cups Boiling Water
  • ½ teaspoons Salt
  • 6 Tablespoons Oil For Spreading Over Pancake
  • 1 teaspoon Salt For Sprinkling
  • ½ bunches Green Onion, Finely Minced
  • 6 Tablespoons Oil, For Frying

Preparation

Combine flour, water and salt well and knead into a smooth dough (you can use standing mixer or bread machine). Let it stand at least 20 minutes. Cover with damp cloth.

Divide dough into small balls (6). Roll the balls thinly into a somewhat round shape, as thin as you can; if it tears, do not worry – just rejoin it again. Put 1/2 tsp oil on the dough and a pinch of salt, spread it all over the surface. Sprinkle the green onion, spreading all over the surface.

Start rolling from one end, until you have a long tube. Roll the tube around itself, like a coil. Then with a rolling pin, flatten it up to 1/2 inch thickness. Do not worry if some green onion comes out in the process.

Heat a frying pan with 1 tbsp oil, and place the pancake on it. Fry it until golden on both sides. You can eat it plain or serve it with a mix of 1/4 cup soy sauce, 2 tbsp vinegar, 1 tbsp sesame seeds and 1 tsp green onions, and optional 1 clove garlic minced.
