Description

Delicious, healthy granola cluster snacks made from muesli with a white chocolate drizzle.

Ingredients

  • 2 cups Muesli
  • ½ cups Chocolate Chips
  • ¼ cups Raisins (or Dried Cranberries, Blueberries)
  • ¾ cups Halved Cashews (or Other Nuts/seeds)
  • ¼ teaspoons Salt
  • ⅓ cups Honey
  • ⅓ cups Syrup (maple/pancake)
  • 1 Tablespoon Butter
  • 1 teaspoon Vanilla
  • ¼ cups White Chocolate Chips
  • ½ Tablespoons Butter

Preparation

1. Preheat oven to 300 F/150 C.
2. In a bowl mix together muesli, chocolate chips, raisins, nuts and salt. Set aside. Stir together honey, syrup, butter and vanilla in a small saucepan and heat over low heat until mixture is liquid (1-2 minutes).
3. Pour honey mixture over muesli mix and stir to moisten (some of the chocolate chips will melt). Using a tablespoon place heaping mounds of muesli on a parchment paper or Silpat-lined baking tray. Bake for about 30 minutes or until golden (in my gas oven 15 minutes was enough). Let the mixture cool fully before removing from baking tray.
4. Melt the white chocolate chips in the microwave in 30 second heat bursts (stir between bursts). Once melted, add 1/2 tablespoon of butter to make it more liquid and drizzle over the cooled clusters.
