Description

A fun and tasty appetizer!

Ingredients

  • 1 log (about 4-7 Oz. Log) Goat Cheese
  • ¼ cups Chopped Cranberries
  • 3 Tablespoons Chopped Pecans (or Walnuts)
  • Lollipop Sticks

Preparation

Shape the goat cheese into 1-inch balls, place in the refrigerator for 30 minutes or so, then coat them with the cranberries and nuts (or desired topping). Insert sticks and arrange on a platter. Cover and place back in the refrigerator until ready to serve.

To stretch the goat cheese, you could add in 4 ounces of very soft cream cheese. You can coat it with crispy finely chopped bacon, chopped herbs or chopped pine nuts. Whatever you might enjoy.

You could also just make mini cheese balls and stick the sticks in. The sticks give it a fresh fun look. These are not to be eaten lollipop style. Instead, just put one on your plate and enjoy with crackers or vegetables.

I made these as an appetizer and they were delicious. Everyone loved them and lots of people commented on the uniqueness of the taste. They were also super easy to prepare and serve. I will be using this recipe again in the future. Thanks for sharing!
