This is a great appetizer from Spain where it is called Gambas Al Ajillo. Nearly all the bars in Spain serve food and this is one of the most popular of the tapas, along with the Spanish omelette (frittata) called ‘tortilla.’
Sprinkle the shrimp with the salt and let sit for 10 minutes.
In an earthenware casserole (I use a cazuela I bought in Spain) or other shallow casserole, heat the oil with the garlic and parsley until the garlic begins to sizzle.
Add the shrimp and stir until opaque.
Add the sherry and salt to taste, and cook over medium heat for a minute or two until the sherry evaporates and the sauce thickens slightly.
Serve immediately in the casserole accompanied by a crusty loaf of bread to soak up the sauce.

Made this Garlic Shrimp tonight and it was delicious! We all loved it! It is healthy and soooo easy! (I didn’t have an earthenware casserole so i used my cast iron skillet)
