Description

Loaded nachos, great for any sports hosting party.

Ingredients

  • 1 Tablespoon Olive Oil
  • 1 cup Onion, Diced
  • 16 ounces, weight Lean Ground Turkey
  • ¾ cups Red Bell Pepper, Diced
  • 1 teaspoon Chili Powder
  • 1 teaspoon Garlic Powder
  • 2 cups Salsa, Medium Or Hot
  • 1 can (540g Size) Black Beans, Drained
  • Salt And Pepper, to taste
  • 1 bag (320g Size) Tortilla Chips
  • 1 cup Cheddar Cheese, Shredded
  • 1 cup Mozzarella Cheese, Shredded
  • 1  Jalapeno, Chopped (Optional)
  • 1 stalk Green Onion, Chopped (optional)

Preparation

1. Preheat oven to 450 F and grease a pizza pan or oven proof platter.
2. In a large skillet or wok add olive oil and heat over medium heat. Then add onion and saute for about 5 minutes on medium heat.
3. Add ground turkey and cook until no longer pink, crumbling meat as it cooks, for about 5 minutes.
4. Add red bell pepper and cook for 2 additional minutes, stirring as you go.
5. Add chili powder, garlic powder, salsa, beans and salt and pepper and simmer for 30 minutes until thickened, stirring every 10 minutes.
6. Place half of the tortilla chips on the pan and cover with half of the ground turkey mixture and either the cup of mozzarella or cheddar cheese. Repeat with the remaining chips, turkey mixture and cheese.
7. Bake for 6 minutes in the oven until cheese is melted. Remove from oven and top with green onion and jalapenos once complete.
8. Enjoy!
