Description

Perfect for those hot summer days and summer celebrations.

Ingredients

  • FOR THE CRUST:
  • 1-½ cup Flour
  • ½ cups Powdered Sugar
  • ¾ cups Butter
  • _____
  • FOR THE FROSTING:
  • 2 packages (8 Oz. Package) Cream Cheese, Softened
  • ½ cups Powdered Sugar
  • 1-½ teaspoon Vanilla
  • Fruit, For Topping
  • _____
  • FOR THE GLAZE:
  • 1 cup Pineapple Juice
  • 2 Tablespoons Cornstarch
  • ½ cups Sugar

Preparation

Crust:
Mix flour, powdered sugar and butter together; press into an ungreased pizza pan. Bake crust for 20-30 minutes at 3oo degrees.

Icing/Frosting:
Mix together softened cream cheese, powdered sugar and vanilla. Spread on crust once it has cooled.

Arrange desired fruit on top. You can really use any type of fruit that you like; This recipe is flexible—strawberries, kiwi, pineapple, grapes, berries, mandarin oranges, bananas—whatever you like.

Glaze:
Cook pineapple juice, cornstarch, and sugar in a small saucepan over medium low heat. Cook until sauce is clear. Drizzle over fruit.

Refrigerate until ready to serve. This can be made up to 1 day in advance.
