Description

I love Del Taco (a local Mexican fast food chain in California) and a year or so ago, they came out with battered jalapeno rings. Uh … they are awesome. So, when I saw ‘A Cozy Kitchen’ and the amazing fried pickle chips, I had to put a little twist on the recipe! I hope you like them!

Ingredients

  • 1 jar (11 Oz. Jar) Jalapenos (Like Embasa Nacho Sliced Jalapenos)
  • 1 cup Flour
  • ½ cups Milk
  • 2 whole Eggs, Beaten
  • ⅔ cups Corn Meal
  • ½ cups Canola Oil Or Any Vegetable Oil, For Frying

Preparation

Drain your jalapenos and place them in a small bowl.

Your flour, milk, eggs, and corn meal also need to be in their own bowls.

Prepare oil by pouring about a 1/2 inch into your pan. Heat on medium heat. While your oil is heating up, prepare your jalapeno slices.

Dip jalapeno slices in milk, then flour, then eggs, then cornmeal. In the pan, place batter-covered jalapenos in the oil. Be careful, the oil may pop back (this always gets me and it does not feel too good). Fry for 1-2 minutes on each side or until brown. After they’re done, remove and place on a paper towel to drain.

Dipping sauces: nacho cheese, salsa, hot sauce, guacamole, sour cream.

Enjoy! There’s nothing like these crispy and spicy delights!
