Description

Fresh watermelon salsa with tomato, lime and cilantro.

Ingredients

  • ½ cups Chopped Watermelon
  • ¼ cups Chopped Tomato
  • 2 Tablespoons Chopped Red Onion
  • 1 Tablespoon Chopped Jalapeno
  • 1 Tablespoon Chopped Cilantro
  • 2 Tablespoons Freshly Squeezed Lime Juice

Preparation

Toss all ingredients together and season with salt and pepper.

Serve with tortilla chips and cinnamon-sugar pita chips.

I have been looking all over the internet for hours, trying to find a watermelon salsa recipe that is suitable for water-bath canning. If I kept the proportions the same, but multiplied this recipe by 10 or 15 times the listed amounts, and used bottled instead of fresh lime juice (as many canning recipes for other salsas suggest, to get enough acidity), does anyone think the overall acidity would be high enough that I could can it safely without having to use a pressure canner?

Wow! NEVER would have thought this would be so amazing! My husband even liked it and he totally turned up his nose when I told him I was going to make watermelon salsa. I used more than 1/2 a watermelon–so I stopped measuring, but did about half the tomatos as I did the watermelon and came out with a huge delicious bowl! :) TFS!

Hey guys! I just changed the serving size. I served this at my house with multiple appetizers a few weeks ago and there were about 12 people there. I guess if you are eating it alone, you need more! Sorry for the confusion. :)

I’ve made this many times now, and it’s my favorite appetizer to take to the pool on a hot day. It’s so, so scrumptious — no one can stop eating it! It needs quite a lot of salt to bring the flavor. Thanks for posting this great recipe!

I made this twice. The first time, I did it as the recipe was written, but doubled. I followed missdriggs’ advice and added salt, and it was a great suggestion!

The second time I made it, I did everything pureed but the watermelon. I also quadrupled the recipe. I preferred the original version, but my family liked the pureed version better.

We used tortilla chips, and it was wonderful! It’s the perfect summer salsa.

I’m making chicken quesadillas with grilled pineapple later in the week, and I’ll sub the original version of this recipe for the pico de gallo the quesadillas call for.

Light! Fun! Fresh! Sweet! I brought this today to our family Memorial Day picnic and everyone loved it. I did add a little bit of kosher salt to enhance the flavor (I added about 1/2 tsp or so but I had quadrupled the recipe). It went quickly with just tortilla chips on the side. I think that it would be great with cinnamon chips or pita chips too! Yum!
