Description

These little lovelies are full of fiber, and fill you up quickly! I like to take these on road trips, or on hikes. You could also munch on these bad boys in the morning, with a cup of coffee. Yum!

(Just a friendly heads up: Dates are naturally filled with fiber, so stay near the toilet…I found this out the hard way).

Ingredients

  • 2 cups Pitted Dates
  • 1-½ cup Peanut Butter
  • ¼ cups Tahini (or Sub For More Peanut Butter)
  • 3 cups Quick Cooking Oats
  • ¼ cups To 1/2 Cup Sunflower Seeds (shelled)
  • Water (optional)

Preparation

1) Place dates, peanut butter and tahini in a food processor (processing until smooth). If needed, add a little bit of water to help process.

2) In a bowl, mix date mixture with oats and sunflower seeds.

3) Roll into individual balls. Place in the fridge until set (roughly 30 minutes). Enjoy!

I’m so impressed with how these turned out! I halved the recipe (since it’s just me and my boyfriend), and I soaked the dates in boiling water for a few minutes to soften them up before I drained them and added to the food processor. Ialso used natural peanut butter and a couple tablespoons of honey for sweetness.

Great vegan recipe!
