Description
I had to bribe our church secretary to share this recipe with me. I have had many cucumber sandwiches over the years, but hers are absolutely my favorite. The grating of the cucumber and onion is what makes the difference for me.
Ingredients
- 2 whole Medium Size Cucumbers, Grated
- 2 packages (8 Ounce) Cream Cheese, Softened
- ½ cups Miracle Whip Or Mayonnaise
- 1 whole Small Onion, Grated
Preparation
Peel the cucumbers and grate into a colander. Drain well.
Whip together the cream cheese and Miracle Whip.
Add the grated cucumbers to the cream cheese mixture. Grate in the onion (do this onion step to your own liking).
Stir everything together and throw it on some of your favorite bread. Cut sandwiches into triangles or squares for small party size finger bites.
