These egg and asparagus toasts are a recreation of a simple dish I had in Spain last year. They’re almost too simple to even write a recipe for, except that there’s a surprise ingredient. A sprinkling of sherry vinegar over the bread makes the whole dish pop.

Believe it or not, I’ve never had these! Must be a southern thing… just not something I’ve seen before. It looks really tasty, I can’t wait to make some.

There is nothing more delicious than cucumbers with cream cheese…and I love the dark pump. bread with it. A nice color contrast!

My favorite food (from childhood and beyond, Ree!) is toast, schmeared with cream cheese, topped with sliced cucumbers, salted and peppered. This sounds like a fun variation!

Umumm ~ My mom made cucumber and tomato sandwiches (even homemade mayo!) but this recipe looks a notch up and love the Pumpernickel!

I made these for a luncheon at work today, and they were excellent. Everyone liked them. Just don’t make them too far ahead and keep them covered with saran wrap.

I love these little open sandwiches but have never thought of flavoring the cream cheese. Can’t wait to try it!

My 14 y.o. daughter ‘created’ something like this one day, and it came out great, but she hasn’t been able to recreate it again with the right proportions. I’ll print this for her!
