Ingredients
- 1 whole Egg
- 2 Tablespoons Oil
- 1-½ Tablespoon Matzo Meal
- ½ teaspoons Salt
- ¼ teaspoons Baking Powder
- ½ whole Onion
- 6 whole Peeled And Finely Chopped Yukon Gold Potatoes
Preparation
1. Preheat oven to 400F.
2. In large bowl, whisk together egg, oil, matzo meal, salt and baking powder.
3. Grate onion and add to mixture.
4. Add chopped potatoes to mixture.
5. Spoon rounded teaspoons of mixture into greased mini muffin tins.
6. Bake 30 minutes or until golden brown.
