Description

What’s a cocktail without a great snack? Not only is this recipe a delicious accompaniment to your favorite drink but it’s also lightened up for a guilt-free indulgence.

Ingredients

  • ¼ cups Panko Breadcrumbs
  • 4 Tablespoons Parmesan Cheese
  • 1 can (approximately 14 Oz. Size) Artichoke Hearts
  • Salt And Pepper, to taste
  • FOR THE DIPPING SAUCE:
  • 1 clove Garlic, Minced
  • ¼ cups Low-fat Mayonnaise
  • 2 Tablespoons Low-fat Buttermilk
  • 1 teaspoon Lemon Juice
  • 1 Tablespoon Dill Chopped
  • Salt And Pepper, to taste

Preparation

Pour the breadcrumbs and half the cheese into a plastic baggie. Cut the artichoke hearts into quarters, add them to the plastic baggie and shake until well coated. Place the artichokes on a sheet pan lined with parchment paper, sprinkle on another tablespoon of cheese and bake in a preheated 450ºF oven for 30 minutes. As soon as the artichokes come out of the oven, transfer to a serving dish and sprinkle on the remaining tablespoon of cheese. Serve warm.

To make the dipping sauce, combine the minced garlic, mayonnaise, buttermilk, lemon juice and dill in a bowl and season to taste. Because this sauce is a little thick, it’s also great for vegetables but, if you’d like it a little looser, add 1 tablespoon of low-fat milk or fat free half-and-half.

Note that you can substitute chives or scallions for the dill if you prefer.
