Description

I’ve never had corn fritters before. I always thought they were made with cornmeal and I’m not a fan. Last night though when I saw them being made on “The Best Thing I Ever Ate,” I saw they were not and had to try them. They are fabulous and I’m going to try to sway more Albertans to try this delish dish!

Ingredients

  • 1 can (15 Oz. Can) Whole Kernel Corn
  • 1 whole Celery Stalk Finely Chopped
  • 2 Tablespoons Chopped Chives
  • 1 whole Green Onion, Chopped
  • 1 teaspoon Seasoning Salt
  • 1 whole Egg
  • 3 Tablespoons All-purpose Flour

Preparation

Drain canned corn and place in a bowl. Add celery, chives, green onion and seasoning salt. Mix in egg and flour until a bit doughy. Drop by teaspoonfuls into hot oil. I don’t have a deep fryer so I use my big cast iron pot with about 1-1/2″ of oil set to medium on my stove top. Cook until golden brown on one side then flip and cook until both sides are golden brown. Mine took about 5 minutes in total, so 2-1/2 minutes per side.

seriously!?? no seriously!!? I made these last night for my friends and OMG! I think I between the three of us, we ate them all within 10 minutes of putting them out… thank you so much for posting this one, I’ll be making them again this weekend :)
