Description

These festive vegetarian appetizers are just the right mix of crunchy, creamy, and spicy. They are quite the crowd-pleaser and perfect for serving at your next gathering, whether it’s a Christmas one or not!

Ingredients

  • 1  Baguette, Sliced (About 24 Slices)
  • Olive Oil
  • ¼ cups Cream Cheese
  • 2  Large Avocados (Or 3 Small), Halved And Carefully Sliced Crosswise
  • ¼ cups Thai Sweet Red Chili Sauce (I Used Thai Kitchen Brand)
  • 2  Red Jalapeños, Seeded And Thinly Sliced (Sometimes Called Red Fresno Peppers, Or Use Green Jalapeños)
  • 6  Green Onions, Thinly Sliced (Green Parts Only)

Preparation

Preheat oven to 400ºF. Slice baguette (if not using pre-sliced, which I like to do to save time!) and spread on a baking sheet. Brush the top of each slice with olive oil. Bake at 400ºF for 6 minutes. (You may be tempted to leave them in longer, but don’t! They get crunchy quickly, and you don’t want to serve little bricks to your guests.) Remove baguette slices from oven and set aside until cool enough to handle.

Spread a thin layer of cream cheese on each baguette slice. Lay a slice or two of avocado on top, followed by a quarter-sized dollop of Thai chili sauce (exact measurements here!). Garnish with a slice or two of jalapeño and a sprinkle of green onions.

Voila! Ready to serve!

Stop what you are doing right now and make these! Oh my goodness! Seriously SO good. I brought these to a Christmas party and everyone was going nuts about them. They were gone in a flash. They are like a “bow-chicka-wow-wow” explosion in your mouth. Easy to make. Oh, and if your baguette is big it can easily make more than 24. I think I ended up with more like 36. But that was DEFINITELY not a problem! :) Thanks for sharing this recipe.

I served these at our Christmas party last week and they were a huge hit! Even those who don’t like really spicy foods were eating them. Creamy, with a touch of warmth. I’ll make them again. Thank you for the recipe.
