Description

This recipe was born out of having to make too many roll-ups as appetizers. Spreading cream cheese on flimsy slices of chopped beef, rolling up soggy pickle spears and finally cutting them into chunks only to have them disappear within seconds got me to invent an easier alternative. Same flavor, way less work!

Ingredients

  • 6 packages (2 Oz. Each Package) Pressed, Formed Beef Slices (The Brand Name In My Neck Of The Woods Is Buddig)
  • 2 packages (8 Oz. Each Package) Softened Cream Cheese
  • 3 Tablespoons Dill Pickle Relish

Preparation

Stack and chop the beef slices into pretty small pieces, then mix into the softened cream cheese. I usually use the 1/3 less fat variety just to feel a bit self-righteous. Mix in the dill pickle relish along with a bit of the pickle juice to loosen the dip to spreading consistency. You can add more or less beef and more or less relish to suit your taste.

Serve with Triscuits; if you can find the deli rye variety, all the better.

Pickle roll ups are one of my favorite appetizers but I never make them because they take so much effort and are gone so quickly. This I can do! I made a half batch for my small family to encourage everyone to eat some leftover pumpernickle bread. What a huge hit! I’ll be making this again and again.

Rather than use beef, I always made these with ham slices, cream cheese and dill pickle spears. Messy and took forever!

This is a fabulous short cut! I ended up using the dried beef in the jar, since I was making it the night before, but it turned out great. I think I would like to try it with corned beef or pastrami next. Add a dash or too of hot sauce to giveit a little kick, or maybe some garlic and onion for another variation. The variety you can add is almost endless!

One of my favorite appetizers that I hate to make because of all the work, thanks for being brilliant enough to come up with an easier variation!
