Description

Granola bars with chocolate chips, almonds, coconut, and butterscotch chips. (Cook time includes fridge time!)

Ingredients

  • 2 cups Oatmeal
  • 2-½ cups Puffed Brown Rice (or Rice Krispies)
  • 6 Tablespoons Ground Flax Seed
  • 1 cup Unsweetened Coconut
  • ½ cups Chopped Almonds
  • 1 cup Honey
  • ½ cups Brown Sugar
  • 2 teaspoons Vanilla
  • 1-¼ cup Peanut Butter
  • 1 cup Chocolate Chips
  • ½ cups Butterscotch Chips

Preparation

In large bowl, mix together oats, puffed rice, flax seed, coconut, and almonds.

On the stove, heat honey and brown sugar until boiling. Boil for 2-3 minutes.

Take off burner and mix in vanilla and peanut butter (I prefer crunchy). Pour over dry ingredients and mix well. Add in chocolate and butterscotch chips.

Pour in 9 x 13 baking dish that has been sprayed with Pam. Cover with waxed paper and press down mix into pan. Refrigerate for 30 minutes to an hour.

Cut into bars and individually wrap in Saran wrap. Try and not eat them all in one night! :P

These were sooo good. I didn’t have any flax seed, so I elimated that. Also, not a fan of coconut or butterscotch, so omitted that. However, I did everything else it said and YUM! Even my kids loved them. Will be making more this week. I stored them in the fridge and would just let them sit out for a few minutes before I ate them.
