This is Miz Jo Ann’s version of the classic appetizer.
Sautee onion and garlic in 1 Tablespoon olive oil. Add this mixture along with tomato, Ro-Tel, and can of chopped green chilies to your blender. Process until smooth. Set aside.
Place cheese and evaporated milk in a large microwave-safe bowl. Microwave 90 seconds. Stir. Microwave in 2-minute intervals (stirring between intervals) until cheese has melted.
Add vegetable puree to melted cheese. Stir well. Continue to heat queso in 30-second intervals until it is at the consistency you prefer. Serve with chips.
Variation: Brown and season 1 pound hamburger or bulk sausage. Add to queso.
