Description

I love to make quesadillas. They are so easy and there are so many ways to make them. I had some chicken and avocado in the fridge that I needed to use up and some turkey bacon in the freezer, so I made a quesadilla. I hope you like it as much as I do.

Ingredients

  • ¼ cups Refried Beans
  • 1 whole Tortilla Shell
  • ¼ cups Cooked Chicken Shredded
  • 2 strips Turkey Bacon, Cooked And Crumbled
  • ¼ cups Tomato, Diced And Seeded
  • ¼ cups Chopped Avocado
  • ⅛ teaspoons Montreal Steak Seasoning
  • 1 pinch Salt And Pepper, Or To Taste
  • ¼ cups Finely Shredded Cheese

Preparation

Spread the refried beans on half of the tortialla shell. Place the shell bean side up in a hot greased pan. Layer with the cooked chicken, bacon, tomatoes, avocado and sprinkle with the steak seasoning and salt and pepper. Top with your favorite shredded cheese, as much or as little as you like. Fold over the empty half of the tortilla shell. I press down on the quesadilla at this point; if you are talented and daring, go ahead and flip the sucker.

Remove from the pan, cut into quarters and top with sour cream and salsa. This is great to make on the grill, too! This recipe can be used as an appetizer or a meal. Reheats well in a toaster oven.
