Description

Super simple and healthy, these chewy, adaptable, homemade granola bars are the perfect grab and go snack… For the whole family.

Ingredients

  • 2 cups Old Fashioned Oats
  • 1 cup Dried Fruit*, Diced
  • ¾ cups Flax Meal
  • ½ cups Sweetened Coconut, Flaked
  • 1  Egg White Lightly Beaten
  • 8 Tablespoons Unsalted Butter
  • 4 Tablespoons Honey
  • ⅓ cups Dark Brown Sugar
  • 1 teaspoon Vanilla Extract

Preparation

Heat oven to 350°F. Line an 8×8-inch baking pan with parchment paper/foil, extending the paper/foil over sides (to use as a handle in order to easily remove the bars).

In a large heatproof bowl, toss oats, fruit, flax meal, coconut and egg white together; set aside.

In a saucepan over medium heat, melt butter, honey, brown sugar, and vanilla extract together and bring to a boil. When it comes to a boil, remove from heat and add it to the oatmeal mixture. Mix until fully combined.

Transfer mixture to the prepared pan, and press mixture firmly and as evenly as you can into the bottom of the pan. Bake 25-30 minutes, or until golden brown. Cool completely on a wire rack.

Using the extended pan lining, lift the cooked bar mixture from pan onto a cutting surface. Cut into 10 bars. Store in an airtight container for about a week, if they last that long.

*I used a tropical dried fruit mix of papaya, mango and pineapple by Sunkist.
