Preheat oven to 425 F. Lay the bread slices on a baking sheet and drizzle with some olive oil. Toast bread for about 5-7 minutes. Remove from oven set aside.
In a large bowl, combine 1 tablespoon of olive oil and the remaining ingredients and lightly mash everything together with a fork or potato masher. You want some of the edamame to be smashed and some to still be intact.
Top toasted bread with cheese/edamame mixture. Garnish with more lemon zest, Parmesan cheese and basil.
