Description

Cheesy, buttery crackers are perfect for any occasion. These are a Southern favorite.

Ingredients

  • 3-½ sticks Butter, Softened
  • 8 ounces, weight Extra-sharp Cheddar Cheese, Grated
  • 8 ounces, weight Sharp Cheddar Cheese, Grated
  • 1-½ teaspoon Kosher Salt
  • 1 teaspoon White Pepper
  • 1 teaspoon Freshly Ground Black Pepper
  • ½ teaspoons Paprika
  • ¼ teaspoons Cayenne Pepper
  • 4 cups All Purpose Flour, Sifted

Preparation

Preheat oven to 350 F. Coat 2 baking sheets with non-stick cooking spray or line with parchment paper.

In a very large bowl, combine butter, cheeses, salt, peppers, paprika, and cayenne pepper. Mix it together with a mixer on medium speed until well blended (you may want to divide the recipe if using a hand mixer). Add sifted flour in batches until combined, mixture will be very thick.

Add mixture to a piping bag or a plastic storage bag with a corner cut off. Pipe the dough mixture into 2 inch strips onto the prepared baking sheets.

Bake in a 350 F oven for 10-12 minutes or until very light golden brown. Cooking time will vary depending on thickness of the strips, so keep an eye on them. Remove pans from oven and place the cheese straws on a wire rack or parchment paper to cool.
