Description

Cheddar rounds that are so butter-cheese rich, they don’t need toppings or dip.

Ingredients

  • 8 ounces, weight Cheddar Cheese, Cut Into Small Cubes
  • ½ cups Butter, Softened
  • ¼ teaspoons Salt
  • ¼ teaspoons Tabasco
  • 1 cup All-purpose Flour

Preparation

1. In your food processor, process cheese until it looks like small crumbles.
2. Add butter in pieces along with salt and tobasco. Process until smooth. Scrape down sides of bowl. Add flour and process until it is mixed in. Pulse a few times to form the dough into a ball.
3. Wrap dough in plastic wrap and chill until firm, about 1 hour.
4. Divide dough in two and roll each half into logs about 1 1/2 inch in diameter. It’s about the same size as a spice jar. Wrap log in plastic and chill 1-2 hours.
5. Preheat oven to 400 degrees F. Lightly grease baking sheets.
6. Cut logs into 1/8″ slices and place slices on baking sheets.
7. Bake until lightly colored, about 10 minutes, being careful not to brown them. Cool on wire rack.
8. Coins can be frozen in containers then later re-heated in a 300 degree F oven for 5-6 minutes.
