Description

A buttery, shortbread like cracker made with cheddar cheese and pecans. Eat with salads, soups or as a snack. Delicious!

The recipe is easily doubled and the dough freezes well so you can have it on hand for quick preparation.

Ingredients

  • ½ cups Butter, Softened
  • 4 ounces, weight Extra-sharp Cheddar Cheese, Grated
  • 1 cup All-purpose Flour
  • 1 cup Pecans, Finely Chopped
  • ½ teaspoons Salt
  • ½ teaspoons Cayenne Pepper

Preparation

Note: I allow butter and grated cheese to sit out until both come to room temperature.

Cream butter and cheese at medium speed for 3-4 minutes. Add flour, pecans, salt, and cayenne pepper. Mix until well blended.

Divide and shape dough into 2 rolls about 1 1/2 inches in diameter by 6 inches in length. Wrap dough in waxed paper or parchment paper, and place rolls in a resealable plastic bag in the freezer until firm, about 1 hour.

Preheat oven to 375 degrees.

Using a serrated knife, cut rolls into 1/4 inch thick slices and lay on an ungreased cookie sheet, leaving space so they do not touch. Bake 8-10 minutes, just until edges are golden brown.

Makes about 36 crackers.

If you freeze the dough for future use, allow the rolls to sit at room temperature for about 10 minutes before slicing.

I made this recipe and found the crackers a little dry and my daughter said the taste was different. I didn’t use the cayenne pepper, but didn’t think that would change the flavor that much. Sorry it did not work for me. :(

I’m looking forward to trying this recipe. There’s a group of little old ladies in Houston that bake these for charity and sell them at the Farmer’s Market on Saturdays. They’re delicious but incredibly expensive. If these taste like theirs, I’ll be your new best friend! Thanks for sharing it.

Delish! I ran out of pecans and had to use about 1/3 cup of walnuts…. no prob! Quick, easy, and yummy! I think next time I might experiment with adding some rosemary…
