Description

Reminiscent of Red Lobster’s “Cheddar Bay Biscuits” these shrimp are coated in garlic cheesy goodness.

Ingredients

  • 2 whole Eggs
  • 2 cups Panko Breadcrumbs
  • 1 cup Shredded Cheddar Cheese
  • 2-½ pounds Fresh Jumbo Shrimp; Peeled And De-veined, Tails Removed
  • ¼ cups Unsalted Butter
  • 2 cloves Garlic, Chopped
  • ½ teaspoons Garlic Salt
  • 1 teaspoon Parsley

Preparation

1. Preheat oven to 350 F. Line a cookie sheet with foil and spray the foil with some cooking spray. Set the pan aside. In one bowl beat the 2 eggs for the eggs wash. In another bowl or plate mix the panko breadcrumbs and cheddar cheese. Dip each shrimp in the egg wash and then in the panko/cheese mixture. Make sure they are coated well. Place on the foil lined cookie sheet.

2. Bake in the preheated oven for 15 minutes or until the breadcrumbs become a nice golden brown and the shrimp are cooked through. In the last 5 minutes of baking, start the topping on the stove top. In a small saucepan over medium heat melt butter (or olive oil). Add chopped garlic, garlic salt and parsley. Heat until the shrimp are done. Pour over shrimp when they are done baking. Serve warm.
