These are amazing, fancy and simple at the same time! The flavors and textures come together to create something really unique. They are really an appetizer, but even as dedicated carnivores, we have them for a main dish.
Butter and toast bread and set aside.
Saute onions in a large skillet over medium heat with olive oil and garlic until onion starts to soften. Add sugar and increase heat to high. Stir and cook for several minutes until onions are lightly caramelized.
Add butter and mushrooms to onions, stir and cook until lightly browned. Add salt and pepper and vinegar. Cook for a few minutes until most of the liquid is evaporated. Toss in the parsley.
Place one or two slices of toast on a plate (one for appetizer, two for main dish) and top with mushrooms.

Really, really good and EASY!!! I substituted red wine vinegar, and it turned out fine. I’m going to use the leftovers to top steak this weekend, yummy! Thanks for sharing!
