Description

I have made candied almonds on the stove top before. I always thought they turned out really well. That is until I tried this baked version. This is 1 million times better. I will never make them on the stovetop again. Plus, this recipe has easy clean up!

Ingredients

  • 1  Egg White
  • 1 teaspoon Vanilla Extract
  • 1 Tablespoon Water
  • 1 pound Raw Almonds
  • ¾ cups Sugar
  • 1 teaspoon Ground Cinnamon
  • 1-½ teaspoon Fleur De Sel (or Regular Salt)

Preparation

Preheat the oven to 250 F. Line a large baking sheet or in my case a round pizza pan with parchment paper.

Using the bowl from your stand mixer add egg white, vanilla extract, and water. Using the whisk attachment, mix everything until frothy. Add the almonds and stir with a wooden spoon to coat thoroughly. Set aside.

In a separate bowl combine the sugar, cinnamon and salt. Stir this into the almond mixture. Make sure every almond is coated in sugar.

Spread the mixture evenly onto your baking sheet. Bake for 1 hour. Stir the mixture every 15 minutes. When done, remove from the oven and allow almonds to cool on the pan.

Once the almonds are cool you can divide them up into jars and give them away as gifts. Or keep them for yourself!

What kind of almonds do you use? Roasted/salted … roasted/unsalted … or raw? Thanks!
