These flavorful little delights make the perfect appetizer or light lunch. They are simple to make and taste amazing! This recipe puts a fun, modern twist on an old favorite.
Preheat oven to 400F.
Using a large round cookie cutter, cut out six bread circles from the bread slices. Using a rolling pin roll the bread circles out until thin. I usually roll over them 2-3 times pressing down lightly on the rolling pin. Press your six bread circles lightly into muffin tins. Bake until brown and slightly crispy. About 6-8 minutes.
While those are baking, whisk together all the dressing ingredients (garlic herbed mayo through pepper). Add romaine lettuce to the dressing, whisk lightly.
Once bread is finished and cooled, add dressed lettuce and top with bacon, avocado and tomato. Serve.
