Description

A spicy guacamole with Cajun Creole shrimp.

Ingredients

  • 3 Tablespoons Creole Seasoing
  • ½ pounds Small Shrimp, Peeled And De-veined
  • 1 Tablespoon Butter
  • ½ whole Red Bell Pepper, chopped
  • ½ whole Yellow Onion, Chopped
  • 3 whole Ripe Avocados, Peeled, Pitted And Chopped
  • 1 whole Lime, Juiced
  • 1 teaspoon Salt And Pepper, Or To Taste

Preparation

Sprinkle the Creole seasoning over the cleaned shrimp. Add 1 Tablespoon of butter in a medium skillet over medium high heat. Once the pan is hot, add the shrimp and saute for a few minutes on each side – just until the shrimp turns pink. Remove shrimp from the pan and set aside.

In a large bowl, combine the bell pepper, onion, avocado, lime juice, salt and pepper. Mash together with a fork. Fold in the Creole shrimp right before serving and sprinkle with another pinch of Creole seasoning.

This was very yummy. Adding the shrimp was a cool twist. Was great on soft tacos the next day.
