Description

Onion rings baked in a buffalo wing batter.

Ingredients

  • 1 whole Large White Onion
  • 1 cup Buttermilk
  • ½ cups Hot Buffalo Sauce (franks Recommended)
  • ½ cups Corn Flakes
  • 1 cup Panko Bread Crumbs
  • 1 ounce, weight Dry Ranch Seasoning
  • ½ cups Egg Whites
  • 1 Tablespoon Tabasco Hot Sauce
  • ½ cups Whole Wheat Flour
  • Ranch Dressing, To Serve

Preparation

In a casserole dish, combine onions, buttermilk and Buffalo sauce. Allow to soak for about 2 hours.

Place corn flakes in a food processor and pulse until they are fine crumbs. Mix corn flakes, bread crumbs and ranch seasoning in a medium-sized bowl.

In another bowl, mix egg whites and Tabasco hot sauce. Put the wheat flour in a separate bowl.

Take each onion and dip in the flour, followed by dipping the same onion in the egg whites and then finally in the bread crumb mixture. Place onion rings on a baking sheet fitted with a baking rack (I actually use a cooling rack) so the onions cook evenly. Once all the onions are dipped, spray lightly with cooking spray.

Bake at 450ºF for 10-15 minutes, flipping onions halfway through cooking. Serve warm with ranch dressing.

I cooked these two ways (just for comparison)…baked and fried. The fried version was very tasty, but the baked version was outstanding! Very delicate flavor, the ranch dressing really took it over the top. My oven tends to cook too hot, so I think next time, I’ll bake them at 400 degrees (they got a little too toasty too fast at 450). They got rave reviews from my husband!
