Place chicken and hot sauce in a stand mixer on low for about 2-3 minutes until just about shredded. I get perfect shredded chicken this way. If you don’t have a stand mixer, you can take this as an opportunity to get some aggression out by chopping them in a big bowl.
Place wonton skins in a mini muffin pan sprayed with cooking spray. Add chicken, topped with bleu cheese and more hot sauce. Bake for 7-10 minutes, or until slightly brown.
Add more buffalo sauce and bleu cheese, if desired.
