Description

My ultimate favorite! Easy, delicious Bruschetta mingled with garlic sourdough toasts and warm, creamy goat cheese. Fantastic!

Ingredients

  • 3 whole Roma Tomatoes Seeded And Chopped
  • 3 cloves Garlic, Minced
  • 4 leaves Large, Fresh Basil, Chopped
  • 1 teaspoon Lemon Juice
  • 2 Tablespoons Olive Oil, Plus More For Drizzling
  • 1 whole Sourdough Flute, Sliced About 1/2 Inch Thick
  • 1 clove Garlic, Peeled And Whole For Rubbing On Bread
  • 4 ounces, weight Goat Cheese, Soft

Preparation

Steps:
Preheat broiler

Mix tomatoes, garlic, basil, lemon juice, olive oil in a medium bowl. Salt and pepper to taste.

Place bread on baking sheet, drizzle with olive oil and lightly toast under broiler, about 1-2 minutes.

While bread is warm, rub each slice with the raw garlic.

Spread about 1 tablespoon of goat cheese on each bread slice.

Top with tomato mixture.

Place on baking sheet and place under broiler another 1-2 minutes.

The boyfriend and I tried this tonight–delicious!! We practically licked the pan. I think we doubled the basil, but the leaves I had were on the small side. We will definitely make this again!
