Description

Blueberry granola with coconut and almonds!

Ingredients

  • 5 cups Rolled Oats
  • 1 cup Almonds
  • 1 cup Sesame Seeds
  • 1 cup Sunflower Seeds (unsalted)
  • 1 cup Shredded Coconut
  • 1 cup Powdered Milk
  • 1 cup Dried Blueberries
  • ½ cups Wheat Bran
  • ½ cups Wheat Germ
  • 1 teaspoon Vanilla Extract
  • 1 cup Honey
  • 1 cup Vegetable Oil

Preparation

Heat oven to 325ºF.

In a large bowl, combine oats, almonds, sesame seeds, sunflower seeds, coconut, powdered milk, blueberries, wheat bran and germ. Sprinkle the vanilla over the dry mixture and stir.

In a small sauce pan, combine honey and oil on medium heat. Stir often. Once mixture is warm, add to the dry ingredients. Mix well.

Take 2 large baking sheets and spray with cooking spray. Divide the granola among the 2 baking sheets.

Place in the oven and bake for 10 minutes. Once the 10 minutes are up, lower the oven temperature to 300ºF. Mix the granola on the cookie sheets and place back in the oven for another 10 minutes.

Cut wax or parchment paper and lay out on the counter. Once the granola is done baking, spread onto the wax paper and let cool completely.

Serve in a bowl with milk or on top of yogurt!
