Description

Black beans, blackeye peas, jalapenos, tomatoes and other veggies mixed together with a zesty Italian dressing. Perfect for scooping up with a tortilla chip!

Ingredients

  • 4 whole Roma Tomatoes, Chopped
  • 1 whole Red Pepper Finely Chopped
  • 1-½ cup Zesty Italian Dressing
  • 1 cup Cilantro, Chopped
  • 2 cloves Fresh Garlic, Finely Chopped
  • 6 whole Green Onions, Chopped
  • 1 whole Jalapeno, Finely Chopped
  • 1 can Chopped Black Olives Small Size
  • 1 can Black Beans, Rinsed And Drained
  • 1 can White Shoepeg Corn Rinsed And Drained
  • 1 can Blackeye Peas Rinsed And Drained

Preparation

Mix all in large mixing bowl. Serve with tortilla chips, toast points, crackers or bagel chips.

Add more or less jalapenos to preference of hotness. Also, if making ahead, add tomatoes up to an hour before serving to avoid them getting mushy.
