Description

I threw these together with ingredients I had in my fridge the other night and realized I had stumbled onto something wonderful and had to write it down before I forgot what I did. My husband loved these and even though they are listed as appetizers, we ate them for dinner!

Ingredients

  • 24 whole Large Mushrooms
  • 1 whole Small Yellow Onion
  • ½ whole Red Pepper
  • 1 clove Garlic
  • 1 stick Butter
  • ½ teaspoons Cayenne Pepper
  • ½ teaspoons Basil
  • 1 teaspoon Sage
  • ¾ cups Shredded Swiss Cheese
  • ½ cups Feta Cheese
  • ½ cups Mayonnaise

Preparation

Wash mushrooms in cold water. Pop out stems. Finely chop stems, onion, red pepper, and garlic. Melt butter over medium high heat and sautee all chopped ingredients until soft, about 5-7 minutes. Transfer to a mixing bowl, mix in cayenne, basil, and sage. Add cheeses and mayonnaise and gently but thoroughly mix.

Using a spoon stuff each mushroom cap with filling. Bake at 350F for 10 minutes.

(Add more or less cayenne pepper to suit.)

I like that they didn’t have a cream cheese mixture in them. I liked the flavor, allthough the feta I had was tomate basil- ok but regular feta would have probably been better. I also added some shredded swiss cheese on top of the mushrooms :) We served these at Christmas and they were a hit! My mother who doesn’t even like mushrooms tried one and said they were good! :) {musta been that stick of butter-tehe}
