Description

My friend Marsha makes the best stuffed mushrooms ever, so here is her recipe!

Ingredients

  • 8 slices Bacon
  • 1 Tablespoon Butter
  • ½ cups Finely Chopped Onions
  • 1 package Mushrooms
  • 8 ounces, weight Cream Cheese
  • 1-½ cup Grated Swiss Cheese, Divided
  • Garlic Powder, To Taste
  • Italian Seasoning, to taste

Preparation

Cook bacon and crumble. Save and use approximately 2 Tbsp of bacon grease in skillet. Add one Tbsp butter.

Brown onions in grease and butter. Finely chop 1/2 the mushroom stems and brown them also.

Add cream cheese and 1 cup of the Swiss cheese. Add some garlic powder and Italian seasoning to taste. Add crumbled bacon and reserve 1/4 up to put on top.

Stuff mushrooms. Sprinkle on remaining bacon crumbles and remaining 1/2 cup Swiss cheese.

Bake at 350 degrees for 10-15 minutes, watching closely. Do not let mushrooms weep (boohoo!) for best effect.

i made these last night and they were great! i substituted cheddar cheese insted of swiss b/c i didn’t feel like grating. they were really yummy and i had one stroke of brilliance that i thought i’d share. as i was digging around to find a dish to bake them in, i saw my mini-muffin pans and thought, ‘if i put a mushroom in each slot, they won’t be able to slide around!’… that worked out great!

I love stuffed mushrooms but never get them since I’m the only one in the family that likes mushrooms. We made these for Mother’s Day. I didn’t use Swiss cheese because I’m not a fan. I thought they were just okay. I think it’s a good base but there was either too much cream cheese or cheese…not sure.
