Description

This is a simple and delicious roasted red pepper hummus recipe. This recipe stays true to Mediterranean flavors with spices like sumac and hot paprika. Add jalapeno pepper for an extra kick. Bring it to your next party; your friends will beg for the recipe!

Ingredients

  • 1  Red Bell Pepper, Washed, Dried, Stem And Seeds Removed, Sliced In 1" Strips
  • 1  Jalapeno Pepper, Washed, Dried, Stem And Some Or All Of The Seeds Removed
  • 4 cloves Garlic, Peeled
  • 5 Tablespoons Tahini Sauce
  • 1  Lemon, Juiced (or More If Needed)
  • 1 can (15 Oz. Size) Chickpeas, Drained Reserving Some Of The Liquid From The Can
  • 2 teaspoons Sumac
  • Salt To Taste
  • 1 teaspoon Hot Paprika
  • 1 Tablespoon Olive Oil (up To Double This Amount, Or As Needed), Plus More For Drizzling Over Peppers

Preparation

Preheat oven to 425 F. Place red bell pepper and jalapeno, if using, in an oven-safe dish and drizzle with olive oil. Insert peppers into the heated oven and let them roast for 25 minutes or until tender.

In a food processor, blend garlic, tahini and lemon juice.

When ready, remove the roasted peppers from the oven and put them into the processor. Run processor briefly to blend.

Now add chickpeas, sumac, salt, hot paprika and olive oil. Run processor to puree. Test, and if hummus is too thick, add a little of the chickpea can water or more lemon juice if you prefer. Run processor again until you reach desired creamy texture.

Serve with pita bread and your choice of vegetables for dipping.
