Beet Cheddar Crackers with Flax Seeds

Description

Beet heart-shaped cheddar crackers are the perfect simple, savory and healthy snack for everyone! The beets act as a natural dye to make these cheesy treats irresistible, just in time for Valentine’s Day.

Ingredients

  • 1-½ cup Extra-Sharp Cheddar Cheese, Shredded
  • 4 Tablespoons Butter, Softened
  • ¾ cups Flour, Plus More For Dusting
  • ½ teaspoons Kosher Salt
  • 2 Tablespoons Ground Flax Seeds
  • ¼ cups Pureed Beets
  • 1 Tablespoon Half-and-half

Preparation

Preheat oven to 350°F.

In a food processor, combine the cheese, butter, flour, salt and ground flax seeds in five 5-second pulses until the mixture resembles coarse crumbs.

Add the beet puree and half-and-half and process until the dough forms a ball, about 10 seconds.

On a lightly floured surface, using a lightly floured rolling pin, roll the dough till it is 1/8-inch thick.

With your favorite cookie cutter (I chose a heart because it’s Valentine’s Day and the dough is perfectly pink/red, but you choose whatever you want), press the cutter into the dough. Place the cut hearts onto an ungreased baking sheet.

Repeat until all of the dough is used up. You will have to gather, re-roll, and use the cookie cutter at least twice.

Place the baking sheet on the middle rack in the oven for 12 to 15 minutes, or until crackers are hard to the touch.

Remove from the oven and set the crackers on a rack to cool. Serve at room temperature.

Note: If you do not have purred beets on hand, I imagine canned would work, but I have never tried it.

Great recipe! They turned out very well. I loved how they weren’t hard crackers but rather crispy on the outside and a bit chewy on the inside.

ooooooh, I think you just gave me a way to sneak beets into something that my husband will not have a clue that they’re there. He “hates” them (childhood trauma) and I love them. Thanks!

My sister-in-love and I get a produce basket every week. Two weeks ago beets were included in the basket and I reached out to my facebook community to see what in the world I could do with beets (as I had NEVER had them before.)
After some pretty “blah” comments I saw this recipe and emailed it to my sis-in-love.
We made them last night and they were outrageously good! They are remnicient of goldfish crackers (with the buttery-cheesy flavor) but have the awesome nutrients from the beets and flax seed. Plus they are a fun, red color!
The recipe itself was easy to make.
These crackers make for a great snack AND a great conversation piece because who would have thought to make beet crackers?
