Description

Great Hot or Cold- we usually eat them hot since we can’t wait that long!

Ingredients

  • 24 ounces, fluid Beer
  • ¼ cups Cider Vinegar
  • 3 cloves Garlic, Crushed
  • ½ teaspoons Kosher Salt Or Sea Salt
  • 2 pounds Shrimp, Cleaned, Tails On
  • ½ cups Red Onion, Chopped
  • ¼ cups Lemon Juice
  • 2 Tablespoons Extra Virgin Olive Oil
  • 2 whole Limes, Cut Into Wedges (optional)

Preparation

1. Combine the first 4 ingredients in a med saucepan.

2. Bring the liquid mixture to a boil over med heat. Reduce heat, cover and simmer for 25 minutes. Stir occasionally.

3. Turn the heat to high and bring liquid to a rolling boil. Add the shrimp and stir as they cook. After 1-2 minutes they will be done. Scoop shrimp into a colander. Reserve cooking liquid.

4. Strain ½ cup of the cooking liquid. Stir in the rest of the ingredients (except limes). Add the shrimp and toss to combine.

5. Can be served warm, or cover and refrigerate, stir occasionally and serve cold.

6. Can make up to 3 days ahead.

7. Garnish with Lime wedges.
