Description

Golden, crispy, and perfect dipped in ranch dressing!

Ingredients

  • 2 whole Vidalia Onions
  • 4 whole Eggs
  • 1 cup Buttermilk
  • 1 cup Beer
  • 1 teaspoon Salt
  • 1-½ cup Flour
  • 2 teaspoons Kosher Salt
  • 2 teaspoons Freshly Ground Pepper
  • 5 cups Oil, For Frying

Preparation

Cut the ends off of the onions and peel them. Slice the onions to create rings about 1.5 inches thick. Remove the center part of the onion slices and discard. Separate the remaning rings and set aside.

Prepare the batter by whisking together the eggs, buttermilk, beer and salt. In a separate bowl mix together the flour, kosher salt, and pepper.

Heat the oil in a deep, heavy saucepan to 350 degrees F. When a drop of batter dropped into the oil sizzles, it’s ready.

Bread the onions by dipping each ring into the beer batter, coat it with the flour mixture, dip it again into the beer batter, and coat again with the flour.

Slip the rings gently into the hot oil and fry for 4-6 minutes, turning halfway, until they are golden brown.

Remove onions from the oil with a slotted spoon and drain on paper towels. They can be kept warm in a 200 degree F oven while you fry the rest of the rings.

Perfect beer-battered onion rings!
