Description

Stand back! This bruschetta packs a powerful punch, but it is oh so good! Eat it on toasted bread, with tortilla chips, add it to hamburgers or chicken … the opportunities are endless!

Ingredients

  • 6 whole Roma Tomatoes
  • 1 whole Red Onion (Large)
  • 1 head Garlic, Minced
  • ½ ounces, weight Fresh Basil, Or To Taste
  • 4 Tablespoons Olive Oil
  • Garlic Salt, to taste
  • Black Pepper To Taste

Preparation

Dice up everything and throw it all together in a bowl. Add olive oil (4 tablespoons is a guideline, but go ahead and just eyeball it), garlic salt to taste, and a couple shakes of black pepper. Stir it all together to combine.

It’s best if you can let it sit and allow the flavors to combine and “get together” for a while. Eat on top of toasted bread, chips, on beef or chicken, even in hamburgers!

Thanks for the recipe! I’ve wanted to make my own for awhile but most seem to call for pesto, and I don’t care for pesto. This small amount of basil is just right for me!

Anyway, I made this last weekend for my Mom’s group cookie exchange and it was a big hit! I did alter the ratio of ingredients to our taste (less garlic & onion) and added a super thin slice of good mozzarella to the top. (Put it in the freezer to make it hard enough to slice thin!) I wish I had made a double batch as it was gone super fast. I will be making this again for our appetizer party on Christmas eve!
