Description

Crispy, roasted potatoes topped with cheese, black beans, salsa, avocado and plain Greek yogurt.

Ingredients

  • 8 whole Yukon Gold Potatoes, Sliced Into Wedges
  • ¼ cups Olive Oil
  • Salt And Pepper, to taste
  • _____
  • FOR THE TOPPINGS:
  • 1 cup Shredded Cheddar Cheese
  • ⅓ cups Black Beans
  • ⅓ cups Salsa
  • ¼ cups Plain Greek Yogurt (or Sour Cream)
  • 2 Tablespoons Green Chilis
  • 2 Tablespoons Enchilada Sauce For Drizzling
  • 2 slices Avocado, Chopped
  • Any Other Toppings Of Your Choice

Preparation

Preheat oven to 450ºF. Wash potatoes, peel off any bad parts, and slice into wedges (however thick or thin you would like). Toss with olive oil and sprinkle with salt and pepper. Lay on a non-stick baking sheet and bake for 45 minutes, flipping once. Remove potatoes and top with toppings you would like.

Bake for 5 more minutes until cheese melts.

These look great. There is a local bar here that serves something similar as an appetizer, except with kettle potato chips instead of baked potatoes. Will have to try this!

What a great idea! This falls under the “why didn’t I think of that” category! :) Made these for an easy weeknight meal this week, and it was a big hit with the family and the cook (me!). We will use this again for sure!
