Okay, so there is nothing better than a loaded baked potato. Right? Except for maybe these little bites of heaven. This is one of the easiest, tastiest things to make. Perfect for watching holiday movies or when you have guests over for a little get together. Or maybe just because you wanted a snack. Enjoy!
Preheat the oven to 400 degrees F. Combine the potato, salt and pepper in a bowl so that all the potatoes are coated.
Spray a mini muffin tin (this recipes makes 12) with cooking spray. Spoon a little of the potato into each tin until you have it evenly distributed among the 12. Take your thumb and press the potato into the cup and up around the sides a little. You should end up with a nice little “cup” of potatoes.
Bake at 400 degrees F for 20-25 minutues until they are golden brown and crispy on the edges and bottom. Take them out of the oven and evenly divide the cheese, bacon and onions in each potato “cup”.
Place under the broiler for just a minute or two until the cheese is melted. Take them out of the oven and add a dollop of sour cream to the top. Pop the yummy goodness into your mouth.
This recipes makes 12 little mini bites.
