Description

Plantains don’t always look nice, but they taste delicious and are highly addictive when baked into these yummy, crispy chips.

Ingredients

  • 1 whole Unripe Plantain
  • 1 Tablespoon Olive Oil
  • ½ teaspoons Salt
  • 1 teaspoon Cayenne Pepper

Preparation

Preheat oven to 400°F.

Peel the plantain with a knife and thinly slice.
In a bowl, toss chips with olive oil, salt and cayenne pepper until well mixed.
Line a baking sheet with parchment paper and place chips in a single layer.
Bake for 15-17 minutes, flipping once halfway through at about 8 minutes.
Remove from baking tray and enjoy!

I tried this and although I like the flavor my chips never got crisp at all. I sliced the plantains about the thickness of a typical banana chip so perhaps it is the level of ripeness that determines whether they crisp or not. Mine were just beginning to turn yellow with some small black streaks. Do the plantains need to be all green for this recipe to work?

We love plantains and all we can get at the store are the unripe ones. Like they are so unripe I have to buy at least a week in advance so they might be ripe by the time I want to use them. I will try this and let you know.

Marilyn, plantain looks like a banana and can be marked as cooking bananas. They are starchy.

The green ones are unripe and the ripe ones look like a beaten up banana. They look bruised and marked up but they are supposed to look like that.

Made these tonight and they were a great late night snack. I cooked them a bit longer to get them nice and crisp. Thanks for posting.
